Instructions

  1. Preheat and Prep: Preheat your oven to 425°F (218°C). Line a muffin tin with paper liners or grease lightly.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. Mix Wet Ingredients: In another bowl, whisk together pumpkin puree, eggs, brown sugar, oil, applesauce, and vanilla until smooth.
  4. Combine: Gently fold the wet mixture into the dry ingredients until just combined. Fold in chopped apples. Do not overmix.
  5. Make Streusel: Combine brown sugar, flour, cinnamon, and cubed butter. Cut with a pastry cutter or fork until crumbly.
  6. Fill and Top: Divide batter evenly among muffin cups, filling 3/4 full. Sprinkle streusel topping generously over each muffin.
