Made with crispy bacon, silky egg yolks, parmesan cheese, and no added cream, this one-pan pasta dish delivers bold flavor with just a handful of ingredients. It’s the ultimate comfort meal that’s both quick and satisfying.


Ingredients

  • 12 oz spaghetti (or fettuccine)
  • 6 strips bacon (chopped, or use pancetta)
  • 3 large egg yolks
  • 1 cup finely grated parmesan cheese
  • ½ teaspoon freshly ground black pepper
  • ½ cup reserved hot pasta water
  • Salt to taste


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve ½ cup of pasta water and drain the rest.
  2. Fry the Bacon: While the pasta cooks, add chopped bacon to a large skillet over medium heat. Fry until crispy, about 6–8 minutes. Remove from heat.
  3. Prepare the Sauce: In a bowl, whisk together egg yolks, grated parmesan, and black pepper.
  4. Combine with Pasta: Immediately toss hot, drained pasta into the skillet with bacon. Remove from heat. Slowly stir in the egg mixture while continuously tossing to prevent scrambling.
  5. Adjust Creaminess: Add reserved pasta water a little at a time until the sauce reaches your desired consistency.
  6. Serve and Garnish: Plate the pasta and top with more cheese and black pepper if desired. Serve hot.

Notes

Avoid adding the egg mixture while the skillet is on the heat to prevent scrambling. Use freshly grated parmesan for the best melt and texture. To make it even creamier, add an extra yolk or splash of pasta water.
