This Easy Creamy Cucumber Salad is a refreshing, tangy, and creamy side dish that comes together in just 10 minutes! Made with crisp cucumbers, fresh dill, and a light sour cream dressing, it’s the perfect companion to grilled meats, BBQs, and summer dinners.
Ingredients
- 2 large cucumbers, thinly sliced
- 1/2 small red onion, thinly sliced
- 3/4 cup sour cream
- 1 tablespoon white vinegar
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Prep the Cucumbers: Thinly slice the cucumbers and place them in a colander. Sprinkle with a pinch of salt and let sit for 10 minutes to draw out excess moisture. Pat dry with paper towels.
- Make the Creamy Dressing: In a large mixing bowl, combine sour cream, vinegar, dill, garlic powder, salt, and pepper. Mix until smooth.
- Combine: Add the cucumbers and sliced red onion to the dressing. Gently toss until everything is well coated.
- Chill and Serve: Refrigerate for at least 15 minutes before serving for best flavor. Serve cold, garnished with extra dill if desired.
Notes
For extra crunch, add sliced radishes or celery. You can substitute Greek yogurt for sour cream for a lighter version. This salad is best eaten the same day but can be stored in an airtight container in the fridge for up to 24 hours.
