Ingredients
Grilled Shrimp:
- 1 lb raw shrimp (peeled and deveined)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp black pepper
- ½ tsp sea salt
- 1 tsp lemon juice
- Optional: pinch of cayenne pepper
Caesar Dressing:
- ⅓ cup Greek yogurt (or mayo)
- 1 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tbsp lemon juice
- 1 garlic clove (minced)
- 2 tbsp grated Parmesan cheese
- Salt and pepper to taste
Wrap Assembly:
- 4 large flour tortillas (or low-carb/gluten-free)
- 2 cups Romaine lettuce (chopped)
- ½ cup cherry tomatoes (halved)
- ¼ cup shredded Parmesan
- Optional toppings: croutons (bacon bits, avocado)
Instructions
- Marinate Shrimp: In a bowl, combine olive oil, lemon juice, and all shrimp seasonings. Toss shrimp and marinate for 10–15 minutes.
- Grill Shrimp: Grill shrimp over medium heat for 2–3 minutes per side until opaque and slightly charred.
- Make Caesar Dressing: Whisk all dressing ingredients until smooth. Taste and adjust seasoning as desired.
- Assemble Wraps: Warm tortillas. Layer lettuce, cherry tomatoes, shrimp, dressing, and toppings.
- Wrap & Serve: Fold wraps tightly, slice in half, and serve fresh!
