Description

A wholesome, flavorful twist on classic Mexican rice, made with high-fiber brown rice, savory spices, and simple ingredients. Perfect for health-conscious families and meal prep.


Ingredients

  • 1 cup long-grain brown rice
  • 2 tablespoons olive oil
  • ½ small onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 ½ cups vegetable broth (or chicken broth)
  • 1 cup crushed tomatoes (or tomato sauce)
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder (optional)
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges (for garnish)


Instructions

  1. Toast the rice: Heat olive oil in a large skillet over medium heat. Add the brown rice and toast for 2–3 minutes, until lightly golden and fragrant.
  2. Sauté aromatics: Add chopped onion and cook for 3–4 minutes until soft. Stir in garlic and sauté for another 30 seconds. Ingredients for Mexican Brown Rice laid out on a white surface.
  3. Add liquids and spices: Pour in crushed tomatoes, broth, cumin, chili powder, salt, and pepper. Stir to combine.

Notes

Use long-grain brown rice for the best texture.

You can substitute vegetable broth for chicken broth for a vegan version.
