Ingredients
- 6 ripe peaches, peeled and sliced
- 1/2 cup granulated sugar (for peach mixture)
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 3/4 cup milk (whole or 2%)
- 1 teaspoon vanilla extract
Instructions
- Prepare the Peaches: In a mixing bowl, toss the sliced peaches with granulated sugar, lemon juice, and cinnamon. Let sit for 10 minutes to macerate.
- Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish or similar.
- Make the Batter: In another bowl, mix flour, brown sugar, baking powder, and salt. Stir in the milk, vanilla, and melted butter until combined.
- Assemble the Cobbler: Pour the batter into the baking dish. Gently spoon the peach mixture evenly over the batter—do not stir.
- Bake: Bake for 40–45 minutes, or until the top is golden brown and the peaches are bubbling around the edges.
- Cool Slightly: Let it cool for at least 10 minutes before serving. Best enjoyed warm with a scoop of vanilla ice cream.
Notes
You can leave the peach skins on for a more rustic texture. Use white or yellow peaches depending on availability. If your peaches are very sweet, reduce the added sugar slightly.
