Ingredients

  • 6 ripe peaches, peeled and sliced
  • 1/2 cup granulated sugar (for peach mixture)
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup milk (whole or 2%)
  • 1 teaspoon vanilla extract


Instructions

  1. Prepare the Peaches: In a mixing bowl, toss the sliced peaches with granulated sugar, lemon juice, and cinnamon. Let sit for 10 minutes to macerate.
  2. Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish or similar.
  3. Make the Batter: In another bowl, mix flour, brown sugar, baking powder, and salt. Stir in the milk, vanilla, and melted butter until combined.

Notes

You can leave the peach skins on for a more rustic texture. Use white or yellow peaches depending on availability. If your peaches are very sweet, reduce the added sugar slightly.
