Tiramisu Sandwich Cookies are a delightful twist on the classic Italian dessert, combining the rich flavors of tiramisu into a convenient and delicious sandwich cookie format.
Ingredients
- 1 ½ cups (3 sticks) unsalted butter, softened
- 1 ½ cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 3 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup strong brewed coffee, cooled
- ¼ cup coffee liqueur (optional)
- 8 ounces mascarpone cheese, softened
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons unsweetened cocoa powder, for dusting
Instructions
- For the Cookies: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- On a lightly floured surface, roll out one disc of dough to about ¼-inch thickness. Use a 2-inch round cookie cutter to cut out cookies. Place them on the prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely. Repeat with the remaining dough.
- For the Coffee Syrup: In a small bowl, combine the cooled strong brewed coffee and coffee liqueur (if using).
- For the Mascarpone Filling: In a medium bowl, beat together the softened mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
- To Assemble: Take one cooled cookie and lightly brush the flat side with the coffee syrup. Spread a generous amount of mascarpone filling on the brushed side. Top with another cookie, pressing gently to form a sandwich.
- Repeat with the remaining cookies and filling.
- Dust the assembled cookies with unsweetened cocoa powder before serving.
Notes
- For a stronger coffee flavor, use espresso.
- If you don’t have coffee liqueur, you can omit it or use an extra tablespoon of strong coffee.
- These cookies are best stored in an airtight container in the refrigerator.
- Allow the cookies to come to room temperature for about 15-20 minutes before serving for the best texture.
