Description

Tiramisu Sandwich Cookies are a delightful twist on the classic Italian dessert, combining the rich flavors of tiramisu into a convenient and delicious sandwich cookie format.

Ingredients

  • 1 ½ cups (3 sticks) unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup strong brewed coffee, cooled
  • ¼ cup coffee liqueur (optional)
  • 8 ounces mascarpone cheese, softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened cocoa powder, for dusting

Instructions

  1. For the Cookies: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  2. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  3. Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  5. On a lightly floured surface, roll out one disc of dough to about ¼-inch thickness. Use a 2-inch round cookie cutter to cut out cookies. Place them on the prepared baking sheets.
  6. Bake for 8-10 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely. Repeat with the remaining dough.
  7. For the Coffee Syrup: In a small bowl, combine the cooled strong brewed coffee and coffee liqueur (if using).
  8. For the Mascarpone Filling: In a medium bowl, beat together the softened mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
  9. To Assemble: Take one cooled cookie and lightly brush the flat side with the coffee syrup. Spread a generous amount of mascarpone filling on the brushed side. Top with another cookie, pressing gently to form a sandwich.
  10. Repeat with the remaining cookies and filling.
  11. Dust the assembled cookies with unsweetened cocoa powder before serving.

Notes

  • For a stronger coffee flavor, use espresso.
  • If you don’t have coffee liqueur, you can omit it or use an extra tablespoon of strong coffee.
  • These cookies are best stored in an airtight container in the refrigerator.
  • Allow the cookies to come to room temperature for about 15-20 minutes before serving for the best texture.
