  • 12 ounces fresh cranberries
  • 3/4 cup granulated sugar add more to taste
  • 1 jalapeno seeded and chopped coarsely (leave the seeds in if you like it spicy)
  • 1/2 cup cilantro
  • 4 green onions
  • 2 tablespoons lime juice
  • pinch salt
  • 2 cream cheese (8 ounce) blocks

  • Combine cranberries, sugar, jalapeno, cilantro, green onions, lime juice, and salt in a food processor; pulse until your desired consistency is reached.
  • Chill the salsa in the refrigerator for at least two hours, or preferably overnight, to macerate.
  • Serve the chilled salsa over two blocks of cream cheese, accompanied by crackers. You can either spread the cream cheese on a dish and top with salsa, or pour the salsa directly over the cream cheese blocks.
  • Adjust the amount of sugar to taste, based on the tartness of your cranberries; up to 1 cup of sugar may be needed.

Notes

This recipe yields enough salsa for two blocks of cream cheese and is excellent for entertaining. Adjust sugar and spice levels according to your preference.
